Spaghetti with Bottarga and Celery

A simple yet flavorful pasta dish featuring bottarga (cured mullet roe) and fresh celery, enhanced with garlic and chili pepper.

Ingredients
7 items- Bottarga di Mugginebottarga from mullet (grey mullet), remove skin before use
- Garlic1 clove, cut in half and remove the germ
- Extra Virgin Olive Oilextra virgin olive oil, preferably from Taggiasca olives
- Chili Pepperto taste, whole or crushed
- Saltfor pasta water
- Spaghettispaghetti pasta
- Celeryfresh celery, remove tough fibres and dice
Method
- Check the bottarga: it should be amber-coloured and slightly soft. Remove the outer skin and set aside.
- Cut a clove of garlic in half, remove the germ, and place it in a pan with extra virgin olive oil.
- Add a chili pepper to the pan and let the garlic become golden.
- Add a ladleful of pasta cooking water to the pan.
- Cook spaghetti in salted boiling water.
- While the pasta cooks, prepare the celery: remove the tough fibres and cut it into small dice.
- When the pasta is al dente, transfer it to the pan with the garlic oil and water.
- Grate about half of the bottarga directly into the pan and add the diced celery. Toss well over heat until creamy.
- Plate the pasta and grate fresh bottarga on top.
