Spaghetti with Bottarga

A Roman-style spaghetti with bottarga (cured fish roe), featuring a soffritto base with celery, garlic, chili, and fresh tomato, finished with parsley, lemon, and a creamy emulsion from the pasta water. This is Chef Ruben's personal twist on the classic Sardinian dish.

Ingredients

- Extra Virgin Olive OilExtra-virgin olive oil
- GarlicWhole cloves
- Hot Chili PepperFresh chili, sliced
- CeleryCelery, cut into small cubes
- Pomodoro CasalinoFresh tomato, diced
- Bottarga di MuggineMullet bottarga (or a mix of tuna and mullet bottarga if available), grated
- ParsleyFresh parsley, finely chopped
- LemonZest and juice
- SaltFor pasta water and to taste
Method
- Prepare the soffritto: in a pan, heat olive oil and add whole garlic cloves, sliced chili pepper, and small cubes of celery. Also add a parsley stem and a strip of lemon zest for extra aroma (to be removed later).
- Add a splash of pasta cooking water to prevent burning and create an emulsion base.
- Meanwhile, cook spaghetti in salted boiling water for 3 minutes less than al dente.
- Transfer the undercooked spaghetti directly into the pan with the soffritto.
- Continue cooking the pasta, adding pasta cooking water as needed to finish cooking (risottata method).
- Halfway through cooking, add the diced fresh tomato (Casalino).
- When the pasta is nearly done, remove the parsley stem and lemon zest from the pan.
- Add finely chopped fresh parsley and toss well.
- Grate a generous amount of mullet bottarga directly over the pasta.
- Add a little more pasta cooking water to create a creamy emulsion, and toss vigorously.
- Finish with a drizzle of raw extra-virgin olive oil.
- Plate the pasta.
- Top with fresh lemon zest and a squeeze of lemon juice.
- Serve immediately.
