A simple yet flavorful Sardinian-inspired pasta dish featuring bottarga (cured fish roe), lemon zest, chili, and crispy Pane Carasau breadcrumbs.

Ingredients
9 items- SpaghettiArtisanal quality, dried for 60 hours
- BottargaOriginal from Sardinia, salted, pressed and dried raw fish roe
- Extra Virgin Olive OilFrom Sicily
- GarlicSliced, used for flavor then removed
- ParsleyStems used in oil, leaves for garnish
- Chili PepperFrom Calabria
- LemonZest only
- Carasau BreadSardinian flatbread, fried for crunch
- SaltA pinch
Method
- Fry the Pane Carasau bread until crispy and set aside.
- In a pan, heat extra virgin olive oil and add garlic slices and parsley stems. Cook until garlic is golden, then remove the garlic.
- Cook the spaghetti in salted boiling water until al dente.
- While pasta cooks, add chili pepper from Calabria to the oil.
- Peel the skin off the bottarga and grate some into the pan.
- In the last two minutes of cooking, transfer the pasta to the pan with a splash of pasta water.
- Add a pinch of salt and toss to create a creamy sauce.
- Turn off the heat and grate more bottarga over the pasta.
- Add lemon zest and chopped parsley, then toss well.
- Serve with crispy Pane Carasau bread on top and a final drizzle of olive oil and lemon zest.
