Spaghetti alla Puttanesca

A classic Roman-style Puttanesca with anchovies, Taggiasca olives, capers soaked in white wine, garlic, chili, and tomatoes, cooked slowly and finished with raw olive oil and parsley.

Ingredients
10 items- Extra Virgin Olive OilGenerous amount, used at different stages
- 3 pcsGarlicCloves with skin
- AnchoviesFillets, 2-3 as preferred
- Taggiasca OlivesAs needed
- Capperi sottosaleRinsed and soaked in white wine, squeezed
- Chili Pepper(optional) — To taste, add more or less
- White WineSplash for deglazing
- Peeled TomatoesCanned, or tomato pulp, as desired
- SpaghettiAs needed
- ParsleyChopped, for finishing
Method
- Put a generous amount of extra virgin olive oil in a pan.
- Add three cloves of garlic with the skin on, after removing the base.
- Add two or three anchovy fillets.
- Add Taggiasca olives (as needed).
- Add capers that have been rinsed and soaked in white wine, squeezed.
- Add chili pepper to taste (two broken pieces and one whole).
- Sauté everything, crushing the garlic to release flavor and remove the skin.
- Deglaze with a splash of white wine and flambé briefly.
- Add canned peeled tomatoes (or tomato pulp).
- Cook the sauce for about half an hour over low heat.
- Meanwhile, cook the spaghetti al dente in salted boiling water.
- Drain the pasta and add it to the sauce.
- Add a drizzle of raw olive oil and a first sprinkle of chopped parsley.
- Add another drizzle of oil and more parsley, then turn off the heat.
- Toss well and serve immediately.
