Spaghetti Alla Moriammazzata

A creamy and flavorful pasta dish invented by Simone, combining salmon, cherry tomatoes, small peppers, and spring onions, all cooked in a single pan with a touch of vinegar and white wine. The name is a Roman expression meaning 'go and be killed', but the dish is a true delight.

Ingredients
12 items- 180 gSpaghettiPreferably a good quality pasta
- 150 gCherry TomatoesCherry tomatoes
- Salmon1 slice of fresh salmon (approx. 150-200g)
- 5 pcsSmall PeppersSmall sweet peppers (e.g., friggitelli or similar)
- 2 pcsSpring OnionsSpring onions
- White WineHalf a glass (about 100 ml)
- 1 tspVinegarWhite wine vinegar or any mild vinegar
- Rosemary1 fresh sprig
- Oregano1 fresh sprig
- Extra Virgin Olive OilTo taste (generous amount)
- SaltTo taste
- PepperTo taste
Method
- Slice the spring onion into large but thin strips.
- Cut the small peppers in half, remove the seeds, then slice them thinly.
- In a pan, heat a generous amount of extra virgin olive oil. Add the spring onion and peppers, season with salt, and add a splash of vinegar. Let the vinegar evaporate, then add the white wine.
- Cook until the peppers are soft and tender, then remove them with a slotted spoon, leaving the liquid in the pan.
- In the same pan, add the cherry tomatoes whole, season with salt, and cook until the skins are charred and blistered.
- Remove the charred tomatoes from the pan and set aside.
- Cook the spaghetti until very al dente (about 2-3 minutes less than the package instructions).
- Transfer the spaghetti to the pan with the reserved cooking liquid, adding pasta water as needed. Sauté vigorously (or toss) to create a creamy emulsion (risottata technique).
- During the final minutes of cooking, add fresh rosemary and oregano leaves.
- When the pasta is al dente, turn off the heat. Add the salmon (cut into cubes) and stir gently so it cooks from the residual heat.
- Serve the pasta, topping with the reserved cherry tomatoes and peppers. Garnish with a fresh oregano leaf and a drizzle of extra virgin olive oil.
