Spaghetti with Anchovies and Puntarelle

A simple and delicious Roman pasta dish combining spaghetti with salted anchovies, puntarelle (chicory), butter, garlic, and chili pepper. Bursting with umami and freshness, it's a quick weeknight favorite.

Ingredients
8 items- Spaghettias needed
- Buttera good knob
- Anchovies in Oilsome whole, some cut into pieces
- Garlic1 small clove
- Chili Pepperto taste, chopped
- Puntarellecleaned and roughly chopped
- Olive Oila drizzle for cooking and to finish
- Cooking Water(optional) — as needed for creaminess
Method
- Bring a pot of salted water to a boil for the spaghetti.
- In a large pan, melt a knob of butter with a drizzle of olive oil over low heat.
- Add a few whole anchovies and stir gently until they dissolve into the butter.
- Add minced garlic and chopped chili pepper; cook briefly until fragrant.
- Cut a few anchovies into small pieces and set aside.
- Add the cleaned and roughly chopped puntarelle to the pan along with a splash of water. Cook for 1-2 minutes until slightly tender.
- Cook the spaghetti al dente, then drain and transfer directly into the pan with the sauce.
- Add the reserved anchovy pieces and toss vigorously, adding a little pasta water if needed to achieve a creamy consistency.
- Serve immediately, topping with extra puntarelle leaves, a pinch of chili, and a drizzle of raw olive oil.
