A simple yet delicious spaghetti with cherry tomatoes, garlic, basil, and plenty of Parmesan cheese, as made by Chef Max Mariola and his mother Fiorella.

Ingredients
7 items- 300 gSpaghetti
- Cherry Tomatoes (Pachino or Datterini)Cherry tomatoes, preferably Pachino or Datterini, in season
- 1 pcsGarlicOne large clove, whole
- Parmigiano ReggianoGenerous amount, grated
- BasilFresh leaves, to taste
- Extra Virgin Olive OilGood quality extra virgin olive oil
- SaltFor pasta water and to taste
Method
- Cut the cherry tomatoes in half.
- In a large pan, heat a generous amount of good olive oil over high heat.
- Add a clove of garlic (whole) and let it brown slightly.
- Add the halved cherry tomatoes to the pan and cook over medium-high heat until they soften.
- Grate a generous amount of Parmesan cheese.
- Meanwhile, cook the spaghetti in salted boiling water until al dente.
- When the tomatoes are soft, crush them slightly with a fork to release their juices.
- Drain the pasta al dente, reserving a little pasta water.
- Add the drained pasta to the pan with the tomatoes and toss well.
- Add the grated Parmesan cheese and mix until creamy.
- Serve with fresh basil leaves and a drizzle of olive oil.
