Spaghetti Aglio e Olio

A classic Roman spaghetti aglio e olio made with garlic, chili, and extra virgin olive oil. Simple, fast, and perfect for sharing with friends over a card game.

Ingredients
4 items- 500 gSpaghettiDry spaghetti, preferably bronze-drawn
- 3 pcsGarlicCloves of garlic
- 1 pcsChili PepperMedium-sized dried red chili pepper
- Extra Virgin Olive OilTo taste; use a generous amount
Method
- Bring a large pot of salted water to a boil and add the spaghetti.
- Meanwhile, finely chop 3 cloves of garlic and one medium chili pepper.
- Heat a generous amount of extra virgin olive oil in a skillet over moderate heat. Add the chopped garlic and chili.
- As soon as the garlic turns golden, add a ladleful of pasta cooking water to stop the cooking and create a light sauce.
- Drain the spaghetti 2-3 minutes before the recommended cooking time, reserving some pasta water.
- Transfer the pasta to the skillet and finish cooking it in the sauce over low heat, adding more pasta water if needed to keep it creamy.
- Turn off the heat and serve immediately. Traditionally, it's served in paper plates for a casual gathering.
