A quick and delicious chicken shawarma with homemade hummus and Israeli salad, perfect for a Middle Eastern street food experience at home.

Ingredients

- Chicken BreastChicken breast, sliced into strips
- Extra Virgin Olive OilExtra virgin olive oil, as needed
- WaterAs needed for cooking and hummus
- TomatoTomato, seeded and diced
- CucumberCucumber, seeded and diced
- ParsleyParsley, chopped
- Precooked ChickpeasCanned chickpeas, drained
- 1 tbspTahini (salsa di sesamo)Tahini, used in hummus and for drizzling
- LemonLemon, juice and zest
- IceIce cubes, for creamy hummus
- SaltTo taste

Method
- Slice the onion and garlic.
- Heat olive oil in a pan, add cumin and paprika, toast briefly.
- Add the sliced chicken breast and cook until golden and cooked through.
- For the Israeli salad: dice tomato, cucumber, and red onion into small cubes. Season with salt, olive oil, and lemon juice. Mix in chopped parsley.
- For the hummus: in a blender, combine canned chickpeas (drained), tahini, lemon juice, a small garlic clove (optional), a pinch of cumin, salt, pepper, a few ice cubes, and a drizzle of olive oil. Add water as needed and blend until smooth and creamy.
- Warm the pita bread slightly. Spread a layer of hummus on the pita, add the Israeli salad, and top with the cooked chicken.
- Drizzle with extra tahini if desired, wrap, and serve.
