Mackerel with Onions and Lemon

Mackerel with onions and lemon is a different seafood dish, fresh and fragrant, combining the sweetness of stewed onions with the lively acidity of lemon.

Ingredients
10 items- MackerelMackerel fillets (large, scaled and filleted)
- LemonFor juice and zest
- OnionsWhite or yellow onions, sliced
- Olive OilExtra virgin olive oil
- ThymeFresh thyme (or dried)
- 2 tbspPeperosaPink peppercorns or black pepper (as per chef's preference; at least 2 tbsp)
- FlourAll-purpose flour, for dredging
- SaltSalt to taste
- ParsleyFresh parsley, chopped
- Black Pepper(optional) — Black pepper, freshly ground (optional)
Method
- Marinate the mackerel fillets with lemon juice for a few minutes.
- Slice the onions.
- In a pan, add olive oil, sliced onions, fresh thyme, and peperosa (pink pepper or black pepper). Cook covered on low heat for about 10 minutes until onions are soft. Season with salt, then uncover and let dry slightly.
- Heat a separate pan with olive oil. Dredge the mackerel fillets in flour, make light incisions on the skin side, and fry skin-side down until crispy and cooked through.
- Add the fried mackerel fillets to the pan with the onions. Squeeze fresh lemon juice over the top, then turn off the heat. Let rest for a few minutes for flavors to meld.
- Garnish with lemon zest, fresh parsley, and optionally black pepper. Serve immediately.
