Traditional Sicilian sfincione from Palermo, tall and soft, made with slowly cooked onion stew, tomatoes, caciocavallo cheese, anchovies, breadcrumbs, and oregano.

Ingredients
7 items- OnionsCooked slowly for 3 hours to make the onion stew
- Peeled TomatoesCrushed by hand
- CaciocavalloAdded on top of dough and as a final topping
- Cetara AnchoviesAnchovies from Cetara

- OreganoDried oregano
- Olive OilExtra virgin olive oil, used for cooking and topping
Method
- Slowly cook the onions in oil until they become a soft stew, about 3 hours.
- Add crushed peeled tomatoes by hand, bring to a boil, then turn off the heat immediately.
- Spread the prepared dough in an oiled baking pan.
- Place caciocavallo cheese and Cetara anchovies on top of the dough.
- Add breadcrumbs, more caciocavallo, oregano, and a generous amount of olive oil.
- Bake in a preheated oven for 20 minutes until the outside is crispy and the inside is soft.
