Traditional Sicilian sfincione from Palermo, tall and soft, made with slowly cooked onion stew, tomatoes, caciocavallo cheese, anchovies, breadcrumbs, and oregano.

Method

  1. Slowly cook the onions in oil until they become a soft stew, about 3 hours.
  2. Add crushed peeled tomatoes by hand, bring to a boil, then turn off the heat immediately.
  3. Spread the prepared dough in an oiled baking pan.
  4. Place caciocavallo cheese and Cetara anchovies on top of the dough.
  5. Add breadcrumbs, more caciocavallo, oregano, and a generous amount of olive oil.
  6. Bake in a preheated oven for 20 minutes until the outside is crispy and the inside is soft.
