Traditional Tuscan bread, also called Semella, made with simple ingredients like flour, oil, salt, yeast, and water. A classic rustic loaf with a crisp crust and soft interior.

Ingredients
5 items- 500 gFlourType 0 all-purpose flour
- 5 gDry Brewer's YeastDry yeast
- 430 gWaterTotal water: 50g to dissolve yeast + 380g for dough
- 10 gSaltFine salt
- Olive OilFor oiling the work surface and shaping
Method
- Sift 500g of all-purpose flour (type 0).
- Dissolve 5g of dry yeast in 50g of water.
- Add the dissolved yeast and an additional 380g of water to the flour. Mix with a wooden spoon.
- Add 10g of salt and knead until the dough comes together.
- Let the dough rest for 10 minutes.
- Perform folds: on a lightly floured surface, fold the dough over itself. Repeat every 20 minutes for a total of 3 folds.
- Let the dough rise for 2 hours, completing the folding cycles within the first hour.
- Lightly oil the work surface, divide the dough into 120g pieces, and shape into balls.
- Place the balls on a baking sheet and let them rise for about 30 minutes.
- Bake at 220°C (430°F) for 20 minutes until golden and crusty.
