Traditional Tuscan bread, also called Semella, made with simple ingredients like flour, oil, salt, yeast, and water. A classic rustic loaf with a crisp crust and soft interior.

Method

  1. Sift 500g of all-purpose flour (type 0).
  2. Dissolve 5g of dry yeast in 50g of water.
  3. Add the dissolved yeast and an additional 380g of water to the flour. Mix with a wooden spoon.
  4. Add 10g of salt and knead until the dough comes together.
  5. Let the dough rest for 10 minutes.
  6. Perform folds: on a lightly floured surface, fold the dough over itself. Repeat every 20 minutes for a total of 3 folds.
  7. Let the dough rise for 2 hours, completing the folding cycles within the first hour.
  8. Lightly oil the work surface, divide the dough into 120g pieces, and shape into balls.
  9. Place the balls on a baking sheet and let them rise for about 30 minutes.
  10. Bake at 220°C (430°F) for 20 minutes until golden and crusty.
