Sciusceddu is a traditional Sicilian dish from Messina. It consists of fried meatballs, a ricotta and egg mixture, and broth, all baked in the oven. A rustic and comforting dish, perfect for holidays.

Ingredients

- OilFor meatball mixture and frying.
- Breadcrumbs
- Salt
- Pepper
- BrothFor meatball mixture and assembly.
- Ricotta
- 2 pcsEgg Yolks
- 2 pcsEgg Whites
Method
- Prepare the meatball mixture: mix ground meat, chopped parsley, parmesan, oil, breadcrumbs, salt, and pepper. If too dry, add a little broth. Let rest for 20 minutes.
- Shape meatballs of 15 g each.
- Fry the meatballs in oil at 160-170°C until golden.
- For the ricotta mixture: soften the ricotta, add parmesan, two egg yolks, salt, and pepper. Mix well.
- Whip the egg whites to stiff peaks and gently fold into the ricotta mixture.
- Distribute the meatballs in cocotte dishes. Add broth to the level of the meatballs. Top with the ricotta mixture and sprinkle with parmesan.
- Bake in a static oven at 200°C for 15 minutes, then grill until golden.
- Serve hot.
