Scauratielli are traditional Italian Christmas ring-shaped cookies made with a cooked dough, fried, and then glazed with honey and anise, finally decorated with colorful sprinkles.

Method

  1. Pour the milk into a pot and add the butter cut into pieces.
  2. Add the lemon and mandarin zest, a pinch of cinnamon, and the sugar.
  3. Bring to a gentle boil.
  4. When the milk boils, add all the flour at once and stir vigorously with a wooden spoon for 3–4 minutes over moderate heat until a smooth dough forms.
  5. Transfer the dough to a work surface and knead by hand until smooth and compact.
  6. Roll out the dough, cut into strips, shape into small ropes, and form into small rings (graffette).
  7. Fry in hot oil at 150–160°C, turning with a fork to cook evenly, until golden brown.
  8. Drain on paper towels.
  9. For the glaze: gently melt the honey over low heat with mandarin zest (or orange/lemon), bring to a boil and cook for one minute.
  10. Let the glaze cool for a few minutes, then add the anise.
  11. Dip each ring one by one into the glaze, place on a tray, and decorate with colored sprinkles.
