Valdostana-Style Scaloppine

Valdostana-style scaloppine is an easy second course but truly super delicious. You can prepare it in advance and bake just before serving.

Ingredients
9 items- 4 pcsPork LoinOr use veal loin
- 4 pcsCooked Ham
- 4 pcsFontinaIf you don't have Fontina, you can use provola or mozzarella
- Butter
- Extra Virgin Olive Oil
- Flour
- Salt
- Pepper
- Vegetable BrothTo taste, used for the bottom of the dish
Method
- Beat the meat slices with a meat mallet to tenderize.
- Dredge the meat in flour.
- In a non-stick pan, melt a knob of butter with a drizzle of extra virgin olive oil.
- Brown the floured scaloppine on both sides.
- Transfer the scaloppine to an oven dish, making sure they do not overlap.
- Season with salt and pepper.
- Place a slice of cooked ham on each scaloppine.
- Top each with a slice of Fontina cheese.
- Pour a little vegetable broth into the bottom of the dish.
- Bake in a preheated oven at 160°C (320°F) for 10-15 minutes.
- Serve with toasted bread and a drizzle of extra virgin olive oil.
