Lemon Scaloppine with Special Sauce

A delicious scaloppine with a creamy lemon sauce made with a butter and flour roux, enhanced with broth and lemon juice. The meat is browned and then simmered in the sauce, finished with parsley and lemon zest.

Ingredients

- Prociutto di MaialePork loin; thin slices. Chicken breast can be substituted.
- Olive OilA drizzle

Method
- Melt the butter in a pan.
- Add the flour and cook for 4-5 minutes, stirring constantly, to create a roux.
- Add the broth and lemon juice, stirring until the sauce thickens.
- In another pan, add a knob of butter and a drizzle of olive oil, then brown the meat slices (pork loin or chicken breast).
- Do not flour the meat before browning to avoid lumps in the sauce.
- Once the meat is browned, lower the heat and pour in the prepared lemon sauce.
- Season with a little salt and black pepper.
- Add chopped parsley and let it cook for a minute to blend flavors.
- Plate the scaloppine, grate some lemon zest on top, and decorate with a lemon slice.
