Salmorejo is a thick Andalusian cold soup made with tomatoes, bread, garlic, olive oil, and vinegar. It is creamier than gazpacho and often topped with jamón or hard-boiled egg, but here served with fruit and nuts.

Method
- Place garlic, stale bread, tomatoes, vinegar, salt, and olive oil in a blender.
- Add optional peach and chili pepper if desired.
- Blend until smooth and creamy.
- Adjust seasoning to taste.
- Chill in the refrigerator until cold.
- Serve garnished with cherry tomatoes, figs, crushed hazelnuts, and a drizzle of olive oil.
