Ajo Blanco is a traditional Andalusian cold soup made from almonds, stale bread, garlic, vinegar, and olive oil. It is creamy, garlicky, and often served with grapes and sliced almonds.

- Water(optional) โ a little, to adjust consistency
- Olive Oilextra virgin, for blending and garnish
- Uva(optional) โ for garnish
- Mandorle a Lamelle(optional) โ toasted, for garnish
Method
- Place almonds, stale bread, garlic, vinegar, salt, and a little water into a blender.
- Add a drizzle of olive oil.
- Blend until smooth and creamy.
- Adjust seasoning to taste (more salt, vinegar, or garlic if desired).
- Chill in the refrigerator until cold.
- Serve garnished with grapes, sliced almonds, and a drizzle of olive oil.
