Scottish Salmon Wellington

A Scottish twist on the classic Wellington: tender Scottish salmon fillets are quickly seared, then wrapped in puff pastry with sautéed mushrooms and melted cheddar cheese, baked until golden and flaky. Served with crispy air-fried broccoli for a complete meal.

Method

  1. Finely chop the champignon mushrooms.
  2. In a pan with olive oil, garlic (pierced), and chili pepper, sauté the mushrooms until golden brown. Remove the garlic and set mushrooms aside.
  3. In the same pan, quickly sear the Scottish salmon fillets for about 20-30 seconds per side. Set aside.
  4. Blanch the broccoli in boiling water for 5-10 minutes, then drain and season with the oil from the pan. Air-fry at 200°C for 4-5 minutes until crispy.
  5. On a sheet of parchment paper, spread a layer of the cooked mushrooms.
  6. Place the salmon fillets side by side on top of the mushrooms, then add slices of cheddar cheese.
  7. Close the puff pastry over the filling to form a parcel. Seal the edges with a fork.
  8. Make shallow cuts on top of the pastry.
  9. Brush the pastry with a mixture of egg yolk and milk.
  10. Bake at 180°C for 15-20 minutes until golden and crunchy.
  11. Serve the salmon Wellington with the crispy broccoli.
