Pan-Seared Salmon with Guacamole and Tzatziki

A quick and healthy salmon dish perfect for International Women's Day, served with two fresh sauces: creamy guacamole and tangy tzatziki.

- 1/2 pcsAvocadoripe and soft
- Limejuice
- Coriandolo Frescofresh coriander leaves
- Spring Onionspring onion, finely chopped
- Tomatodiced tomato for garnish
- Chili Pepperfresh chili pepper, to taste
- Greek YogurtGreek yogurt
- Cucumbercucumber, with peel
- Dillfresh dill
- Garlicgarlic clove, pressed
- Lemonjuice
- Arugularocket or arugula, for serving
- Extra Virgin Olive Oilextra virgin olive oil

Method
- Prepare the tzatziki: Grate the cucumber with skin and squeeze out the water. Add Greek yogurt, lemon juice, chopped dill, pressed garlic, salt, and pepper. Mix well.
- Prepare the guacamole: Cut the avocado in half, remove the stone, and mash the flesh with a fork. Add lime juice, chopped fresh coriander, chili, salt, finely chopped spring onion, and diced tomato. Mix until combined.
- Sear the salmon: Lightly oil the skin of the salmon fillet. Place skin-side down in a hot pan and press gently for a few minutes until the skin is crisp. Flip and cook the flesh side briefly. Remove from heat.
- Plate: Arrange a bed of arugula on the plate. Place the seared salmon on top. Add a generous spoonful of guacamole and a spoonful of tzatziki. Garnish with tomato slices and serve.
