Russian-Style Marinated Salmon

A simple and traditional Russian preparation of lightly salted salmon, marinated with salt, sugar, pepper, and fresh dill. Perfect as an appetizer or with vodka.

Ingredients
5 items- SalmonPreferably Norwegian farmed salmon; leave skin on.
- 2 tbspSaltFine salt, for a fillet of about 400g.
- 1 tspSugarWhite sugar.
- Black PepperFreshly ground black pepper, to taste.
- Aneto FrescoFresh dill sprigs.
Method
- Remove any bones from the salmon fillet using tweezers. Leave the skin on.
- In a small bowl, mix together salt, sugar, and black pepper.
- Sprinkle a layer of the salt mixture on the bottom of a dish.
- Place the salmon fillet on the salt bed.
- Sprinkle the remaining salt mixture evenly over the top of the salmon.
- Spread fresh dill over the salmon.
- Cover the dish with plastic wrap.
- Let it rest at room temperature for 15-20 minutes.
- Transfer to the refrigerator and marinate for at least 12 hours (up to 24 hours for a saltier taste).
- Remove the salmon, rinse off the salt and dill under cold water, and pat dry.
- Slice thinly against the grain and serve.
