Pan-Fried Potato Rosti with Salame

A delicious and fun one-pan dish: crispy potato rosti topped with a soft egg, melted cheese, and slices of high-quality salame (Imola 1962). Perfect for a unique meal.

- Tropea Red Onion(optional) — Optional, as per chef's preference
- PotatoesAbout 2 medium potatoes or as needed for the rosti
- Olive OilExtra virgin olive oil, preferably from Romagna (Brisighella)
- RosemaryFresh sprigs, to taste
- SageFresh leaves, to taste
- SaltTo taste
- Black PepperFreshly ground, to taste
- Eggs1 per serving or as needed; chef used 4 for a large portion
- Formaggio a Pasta SemiduraSuch as fontina or similar, cut into slices
- Salame Imola 1962A few slices, or to taste
- Baby SpinachBaby spinach leaves, a handful
Method
- Grate the garlic and finely slice the Tropea onion.
- Peel and grate the potatoes into thin shreds.
- Heat olive oil in a non-stick pan over medium heat. Add the grated garlic and onion and cook gently until softened.
- Add the grated potatoes to the pan, spreading them evenly to form a round rosti. Season with salt and pepper. Sprinkle with fresh rosemary and sage leaves.
- Cook the rosti until golden and crispy on the bottom, then carefully flip to cook the other side. Press down to flatten.
- When the rosti are almost done, crack one or more eggs directly on top. (Chef adds 4 eggs for a large shareable portion).
- Place slices of semi-hard cheese (such as fontina or similar) around the eggs on the potato base.
- Add slices of salame Imola 1962 on top of the cheese and eggs.
- Cover the pan with a lid and cook on low heat until the cheese melts and the egg whites are set but yolks remain runny.
- Remove the lid, add fresh baby spinach on top, season with a pinch of salt and a drizzle of olive oil.
- Serve immediately, optionally with a glass of Sangiovese wine.
