A perfectly cooked roast beef, rare and tender inside, with a beautiful crust. Served on a crunchy crouton with a fresh lamb's lettuce, apple, and orange salad, and a tangy mustard mayonnaise.

- White Wine VinegarA small drizzle for the salad

Method
- Pat the beef shoulder tip dry with paper towels.
- Heat a generous drizzle of oil in a very hot pan.
- Sear the meat for 3 minutes per side without moving it, until a deep brown crust forms.
- Add rosemary and garlic to the pan.
- Transfer the pan to a preheated oven at 200°C (400°F) and roast for 10-12 minutes.
- Remove the meat from the oven and let it cool completely (the internal juices must relax).
- Meanwhile, prepare the mustard mayonnaise: in a blender, combine 1 egg, a pinch of salt, abundant black pepper, lemon zest, lemon juice, and 1 tablespoon of Dijon mustard. Blend while slowly drizzling in seed oil until thick and creamy.
- For the salad: wash lamb's lettuce. Peel and segment an orange, squeezing the peels. Slice an apple (with skin). Add walnuts. Dress with olive oil, salt, pepper, and a small drizzle of white wine vinegar. Mix gently.
- Once the roast beef is completely cold, slice it thinly.
- Toast slices of bread. Spread a generous layer of mustard mayonnaise on each toast.
- Top with roast beef slices and serve with the salad on the side.
