Neapolitan Roccocò

Roccocò are very famous traditional Christmas sweets from Campania cuisine. They are tasty and fragrant ring-shaped cookies made with almonds and spices.

Ingredients
9 items- 500 gFlour
- 500 gGranulated Sugar
- 500 gMandorle con Buccia
- 3 gAmmoniaca per DolciBaking ammonia
- 10 gPistoA blend of spices typical for Roccocò
- 175 gLukewarm Water
- 30 gHoney
- Buccia di AranciaGrated zest
- 1 pcsEggBeaten, for brushing
Method
- Toast the almonds in the oven at 180°C for 7–8 minutes, or in a pan, stirring constantly.
- In a bowl, mix together the flour, sugar, pisto, baking ammonia, toasted almonds, and grated orange zest.
- Add the warm water with the dissolved honey and begin to knead.
- Knead until you obtain a smooth and compact dough.
- Wrap in plastic wrap and let rest in the refrigerator for at least half an hour.
- Lightly flour the work surface, cut the dough into pieces, then shape each piece into a log about 10 fingers wide.
- Form the ring-shaped cookies (roccocò) and place them on a baking sheet lined with parchment paper.
- Brush with beaten egg, let dry for 5 minutes, then brush again.
- Bake in a preheated fan oven at 180°C for 13–15 minutes.
- Let cool slightly, then serve.
