Risotto with 'Nduja and Sausage

A bold and rustic risotto with a spicy kick from 'nduja and savory sausage, simple to make and always a crowd-pleaser.

Ingredients
7 items- Onionred onion preferred
- SausageItalian pork sausage, crumbled
- Olive Oilextra virgin, for cooking
- White Winedry white wine, for deglazing
- Carnaroli RiceCarnaroli, Vialone Nano, or Arborio
- Vegetable Brothhot homemade vegetable broth, or water
- 'Ndujaspreadable spicy Calabrian salami
Method
- Finely chop the onion and heat a little oil in a pan.
- Add the onion and crumbled sausage to the pan.
- Brown the sausage well, then deglaze with white wine.
- In a separate pot, heat a little oil and add the rice, toasting it lightly.
- Add hot vegetable broth, keeping the liquid level at least one finger above the rice.
- Cook the rice, adding broth as needed. When the rice is still moist but has absorbed most of the broth, add the 'nduja.
- Continue cooking, adding more broth, until the rice is almost done.
- Shortly before the end, add the browned sausage and cook for a few more minutes.
- Taste, then turn off the heat and let the risotto rest for 2-3 minutes.
- Serve without any extra butter or oil (the 'nduja provides enough fat).
