Ingredients
13 items- Carnaroli Rice
- Zucca MantovanaCut into small cubes
- Salsiccia di Monte San BiagioPremium sausage from Monte San Biagio
- OnionHalf for the broth, a little for the risotto
- White WineA splash for deglazing
- ButterFor cooking and mantecatura
- Extra Virgin Olive OilExtra virgin olive oil
- SaltTo taste, added at the end
- Black PepperTo taste, added at the end
- Parmigiano ReggianoGrated for mantecatura and serving
- Crosta di Parmigiano(optional) — Used to flavor the broth
- SageA couple of leaves for aroma
- RosemaryA sprig for aroma
Method
- Heat a pan with a drizzle of oil and a small knob of butter.
- Crumble the Monte San Biagio sausage into the pan and cook, breaking it into pieces.
- Add the pumpkin cubes and cook for a moment.
- Pour in a splash of white wine and let the alcohol evaporate.
- Add a small amount of finely chopped onion and sauté briefly.
- Add the Carnaroli rice and toast it, stirring constantly, until the grains become translucent.
- Begin adding hot broth (water flavored with onion and Parmesan rind) a ladle at a time, keeping the rice always covered and at a gentle boil.
- Add a couple of sage leaves and a sprig of rosemary for aroma.
- Cook for 17-20 minutes, stirring occasionally and adding more broth or a little water as needed.
- Remove the rosemary and sage, then season with salt and pepper.
- Turn off the heat, add a knob of butter and abundant grated Parmesan, and stir vigorously to create a creamy texture (mantecatura).
- Serve immediately with extra Parmesan if desired.
