Risotto with Artichokes and Lonzardo

A rich and creamy risotto with tender artichokes and crispy Lonzardo, a cured pork specialty from Parma. The risotto is cooked with a flavorful fondo made from Lonzardo fat, garlic, leek, and marjoram, then finished with butter, Parmigiano Reggiano, and lemon zest.

Ingredients

- Olive OilExtra virgin, for the base and cooking
- CarciofiRoman-style artichokes, cleaned and sliced
- Carnaroli RiceOr Vialone Nano, for risotto
- White WineFor deglazing
- ButterTwo small cubes for mantecatura
- Parmigiano ReggianoVacche Rosse variety, grated
- LemonZest only, from untreated lemon
- SaltTo taste
- Black PepperFreshly ground, to taste
Method
- Prepare the cooking base: place some Lonzardo fat, garlic, marjoram, leek, and a drizzle of olive oil in a mixer. Blend into a cream.
- Make the broth: put a piece of leek and two sprigs of marjoram in boiling water. Add the washed outer artichoke leaves. Boil for 15-20 minutes.
- Clean the artichokes: cut off the short stem, remove tough outer leaves, cut in half and remove the choke. Slice thinly. Also clean the stems and cut into small pieces.
- In a pan, melt the Lonzardo fat and add the prepared cooking base. Add the artichoke slices and stems. Season with salt and pepper. Cook gently.
- Add the rice to the pan and toast it, stirring, until the rice absorbs the fat.
- Deglaze with white wine.
- Add hot broth to cover the rice. Season with salt. Cook for 15-17 minutes, adding broth from time to time and stirring.
- When almost done, mantecare with butter and Parmigiano Reggiano. Add fresh marjoram leaves and grated lemon zest.
- Serve the risotto with a slice of Lonzardo on top and a grinding of black pepper.
