Risotto with Cheese and Pears

A creamy risotto with pecorino romano and caramelized pears, finished with a red wine reduction and pink peppercorns.

Ingredients
13 items- 1 pcsPeraUse a ripe but firm pear
- Red WineFor cooking the pears
- Granulated SugarTo taste
- Star Anise1-2 star anise
- Black PepperA pinch
- OnionFinely chopped, about half an onion
- Extra Virgin Olive OilA drizzle
- Carnaroli RiceAbout 320g for two servings
- White WineFor deglazing
- BrothHot vegetable or chicken broth
- ButterA knob, about 30g
- Pecorino RomanoGrated, to taste
- Pepe Rosa e BergamottoPink and bergamot peppercorns, ground
Method
- Peel the pear and use a melon baller to make small spheres.
- In a pan, add some red wine, sugar, star anise, and black pepper. Add the pear spheres and cook for about 10 minutes.
- Remove the pears from the pan and let the cooking liquid reduce to a syrup. Set aside.
- For the risotto, sauté finely chopped onion in extra virgin olive oil over high heat until golden.
- Add the Carnaroli rice and toast it for a minute.
- Deglaze with white wine and let the alcohol evaporate.
- Gradually add hot broth, stirring constantly, until the rice is al dente.
- When the risotto is ready, turn off the heat. Add butter, grated Pecorino Romano, and pink and bergamot pepper. Stir well.
- Let the risotto rest for a few minutes.
- Plate the risotto, top with the cooked pear spheres, and drizzle with the red wine reduction.
