A creamy risotto with smoked salmon, tomato passata, and cream, finished with butter, lemon zest, and parsley. A classic 80s Italian dish that is indulgent and comforting.

Ingredients
12 items- Spring OnionFinely chopped
- OilA drizzle for sautéing
- 90 gCarnaroli RicePer person; or use arborio rice
- SaltTo taste
- Tomato PassataFor color and acidity
- BrothHot, as needed for cooking the risotto
- Fresh CreamAdded near the end
- Smoked SalmonJulienned; added in the last minute
- ButterA knob for mantecatura
- ParsleyFinely chopped; for garnish and flavor
- Lemon ZestGrated zest for freshness
- Black Pepper(optional) — A pinch on top
Method
- Finely chop the onion.
- Sauté the onion in a drizzle of oil in a pot until softened, but not browned.
- Add the carnaroli rice and toast it, stirring constantly, for about 1-2 minutes.
- Season with salt immediately.
- Add the tomato passata and toast it with the rice for a minute to cook it slightly.
- Gradually add hot broth (or water) a ladle at a time, stirring often, keeping the risotto at a gentle boil.
- While the rice cooks, julienne the smoked salmon and set aside.
- Finely chop the parsley.
- When the rice is almost cooked (about 3 minutes before the end), add the cream and stir to combine.
- In the last minute of cooking, add the julienned smoked salmon and stir.
- Turn off the heat. Add a knob of butter and most of the parsley, then grate some lemon zest over the risotto.
- Mantecare (stir vigorously) until creamy and smooth.
- Serve immediately, garnishing with remaining parsley and a pinch of black pepper.
