A comforting pasta dish where risoni (rice-shaped pasta) is cooked risotto-style in tomato sauce, finished with butter and Parmesan, and topped with a crispy Parmesan wafer.

  • Hot WaterHot water, added gradually to cook the pasta like risotto

  • BasilStems used for flavor in sauce; small leaves for garnish and on the crisp
  • Lemon(optional)Zest for the Parmesan crisp (optional)

Method

  1. Finely chop the shallot.
  2. Heat olive oil in a wide, low pan and sauté the shallot until softened.
  3. Add the passata (tomato puree), season with salt and pepper, and cook for about 3 minutes.
  4. Add the risoni (rice-shaped pasta) and stir to coat with the sauce, then cook like a risotto, gradually adding hot water a ladleful at a time until the pasta is al dente.
  5. While the pasta cooks, prepare the Parmesan crisp: place a round cookie cutter in a pan over medium heat. Sprinkle a generous layer of grated Parmesan inside the cutter and cook until melted and golden. For extra flavor, add a pinch of lemon zest and small basil leaves before the cheese sets. Remove the cutter when the crisp is done.
  6. Once the pasta is cooked, turn off the heat and add a knob of butter and a generous amount of grated Parmesan. Stir vigorously (mantecare) until creamy.
  7. Serve the risoni in a plate, top with the Parmesan crisp, and garnish with extra grated Parmesan and fresh basil leaves.
