Riso alla Marinara

A simple and quick risotto alla marinara that reminds of summer by the sea. Made with few pantry ingredients: Carnaroli rice, peeled tomatoes, anchovies, garlic, chili, parsley, and lemon. The rice is toasted dry, then cooked with tomatoes and water, finished with a mantecatura of olive oil and parsley. Served with marinated tomato fillets and anchovy fillets.

Method

  1. Toast the Carnaroli rice in a dry pan over low heat for about 4 minutes, salating immediately.
  2. Meanwhile, finely chop one clove of garlic, some fresh chili, and the parsley stems.
  3. Once the rice is toasted, add a drizzle of extra virgin olive oil and the chopped mixture. Sauté until fragrant.
  4. Crush a few peeled tomatoes directly into the pan (reserve some tomato fillets for garnish). Cook for about 2 minutes.
  5. Add hot water and cook like a classic risotto, stirring occasionally, until al dente.
  6. While the risotto cooks, chop some anchovies for the inside. Also cut some tomato fillets (without seeds) for garnish and marinate them with salt, pepper, lemon zest, and olive oil.
  7. Near the end of cooking, add the chopped anchovies to the risotto and stir.
  8. Once the risotto is done, turn off the heat. Add plenty of chopped parsley leaves and a generous drizzle of olive oil. Mantecare (stir vigorously) to create a creamy texture.
  9. Plate the risotto. Top with the marinated tomato fillets, a few anchovy fillets, a parsley leaf, and a final drizzle of olive oil.
