Pan-Fried Risotto Cake with Cheese Fondue

A traditional Lombard recipe of pan-fried risotto cake made with saffron risotto, served with a Parmesan fondue. This version is adapted for people with IBD using vegetable cream and olive oil instead of butter.

Method

  1. Prepare the chicken broth: In a pot, combine chicken thighs, celery, carrot, and water. Bring to a boil, then simmer for about 30 minutes. Strain and keep warm.
  2. In a large pan, heat a drizzle of olive oil and sauté finely chopped onion until translucent.
  3. Add the rice and toast for a minute, stirring.
  4. Deglaze with white wine and let it evaporate.
  5. Add a ladle of hot chicken broth and stir. Continue adding broth as it absorbs, cooking the risotto until al dente (about 15-18 minutes).
  6. Halfway through cooking, add saffron dissolved in a little broth. Season with salt.
  7. Once cooked, spread the risotto on a lightly oiled baking sheet to form a layer about 1 cm thick. Let it cool completely (preferably overnight).
  8. Cut the cold risotto into discs or squares.
  9. Heat a non-stick pan with a little olive oil (or use parchment paper to reduce fat). Pan-fry the risotto discs on both sides until golden and crispy.
  10. For the fondue: In a small saucepan, heat vegetable cream until just boiling. Remove from heat and add grated Parmesan, stirring vigorously until smooth.
  11. Serve the risotto cake with the Parmesan fondue on the side.
