Rigatoni with Ricotta and Pepper

A creamy Roman pasta dish made with sheep's milk ricotta, pecorino, and black pepper.

Ingredients
6 items- 400 gRigatoni
- 250 gSheep's Ricottafresh and well-drained
- Black Peppercornsabundant, to taste
- 50 gPecorino Romano DOP40-60 g, finely grated
- Coarse Saltto taste
- Lemon Zestgrated, for finishing
Method
- Cook rigatoni in a large pot of boiling salted water until very al dente. Reserve some pasta water.
- Toast black peppercorns in a dry pan for a few seconds, then crush them with a mortar and pestle or a knife.
- In a bowl, combine the fresh sheep's milk ricotta with the crushed pepper. Add a bit of warm pasta water (around 70°C) and stir until the ricotta becomes creamy.
- Drain the pasta and transfer it to the ricotta mixture. Toss to coat.
- Sprinkle generously with grated Pecorino Romano and mix.
- Finish with a grating of lemon zest. Serve immediately.
