Lamb Ragù

A rich and flavorful lamb ragù made from ribs, slowly simmered with tomato, red wine, and aromatics. Perfect for pasta, bruschetta, or lasagna.

Ingredients
10 items- Agnello (costole)meat from lamb ribs, cut into pieces
- Carrotchopped
- Onionchopped
- Rosemarya sprig
- Red Winefor deglazing
- Cherry Tomatoescherry tomatoes, halved with their juice
- 2 tspTomato Pastedouble concentrated tomato paste
- Olive Oilextra virgin olive oil, as needed
- Water or Vegetable Brothwater or vegetable broth, for cooking
- Saltto taste
Method
- Debone the lamb ribs and set the bones aside. Cut the meat into pieces with a knife (do not grind).
- In a pot, heat a drizzle of olive oil and brown the lamb bones over high heat until caramelized.
- Remove the bones and deglaze with red wine.
- Add the chopped carrot and onion, and sauté until the vegetables are soft and the liquid has evaporated.
- Add another drizzle of olive oil, then add all the cut lamb meat. Brown it well.
- Add the cherry tomatoes (halved with their juice) and two teaspoons of double concentrated tomato paste.
- Add a little water or vegetable broth and a sprig of rosemary.
- Lower the heat and cook on medium-low for about 2-3 hours, until the meat is tender.
- Season with salt at the end.
- Serve with pappardelle, fettuccine, or as desired.
