Ragù alla Romana

This is the recipe for Roman-style ragù, rich and full of flavor. A classic meat sauce from Rome, made with beef, pork sausage, guanciale, and slow-cooked with vegetables and wine.

Ingredients
13 items- Extra Virgin Olive Oil
- Guanciale
- 400 gFresh Sausage
- 600 gBeef
- Salt
- Pepper
- 1/2 cupRed WineHalf a glass (approx. 75ml)
- 1 pcsLarge Onion
- 1 pcsCarrot
- 1 pcsCelery
- 2 tbspTomato Paste
- Vegetable Broth
- Bay Leaves or Marjoram(optional) — Optional, to taste
Method
- Add olive oil and diced guanciale to a large pot and cook until the guanciale renders its fat.
- Add the fresh sausage, breaking it up into small pieces with a spoon.
- Add the beef and stir to combine. Season with a little salt and pepper (remember the guanciale and sausage are already salty).
- Pour in the red wine and let it cook until the alcohol has evaporated.
- Add the finely chopped onion, carrot, and celery. Stir and cook until softened.
- Add the tomato paste and stir well to incorporate, giving the sauce a nice color.
- Add vegetable broth to cover, then add bay leaf or marjoram if using.
- Partially cover the pot and let it simmer over moderate heat for about 2 hours.
- Once cooked, the ragù will be thick and intense. Serve as desired.
