Mashed Potatoes

A smooth, velvety French-style mashed potato made with Agria potatoes, butter, and a touch of cold milk. The chef uses 1/3 the weight of potatoes in butter for a lighter version of the classic Robuchon recipe.

Ingredients
4 items- Agria Potatoes
- Coarse Salt
- Butter1/3 the weight of the potatoes
- Milk(optional) — cold, only if needed
Method
- Peel the Agria potatoes.
- Boil them in salted water for about 30 minutes, until tender.
- Drain and pass through a fine sieve for a very smooth texture.
- Transfer the sieved potatoes to a pan over medium heat to evaporate any remaining water.
- Add a pinch of coarse salt.
- Add butter (about 1/3 the weight of the potatoes) and mix until fully incorporated.
- If needed, add a little cold milk to adjust consistency, but do not overdo it.
- Turn off the heat and serve immediately.
