Provola alla Pizzaiola

A classic Neapolitan dish made with smoked provola cheese in a quick tomato sauce with garlic, chili, basil, and oregano, served on toasted rustic bread.

Ingredients
10 items- Olive OilAbundant, for sautéing
- Garlic2-3 cloves, plus extra for rubbing on bread
- Chili Pepper1 fresh chili, to taste
- BasilStems for sauce, fresh leaves for garnish
- Peeled Tomatoes1 can or about 400g
- SaltTo taste
- Black PepperTo taste
- Smoked ProvolaSmoked provola cheese, about 250-300g
- Dried OreganoTo taste
- Homemade Bread(optional) — Rustic bread, for serving
Method
- In a large pan, heat abundant olive oil. Add 2-3 cloves of garlic and chili pepper. Add basil stems and stir.
- Add peeled tomatoes, a splash of water, salt and pepper. Cover and cook for 5 minutes, then uncover and cook for another 5 minutes.
- Meanwhile, cut the smoked provola into slices about 1 cm thick.
- Slice rustic bread, rub with a clove of garlic, and toast in the oven or under the grill until golden.
- Once the sauce is ready, add fresh basil leaves. Place the provola slices into the pan, sprinkle with dried oregano. Cook over medium heat for 2 minutes.
- Serve the provola alla pizzaiola on the toasted bread, optionally adding some sauce on top.
