Crunchy baked cauliflower florets coated in a light batter and served with a sweet and tangy lemon-honey sauce.

- Clean the cauliflower and separate into small florets.
- Prepare the batter: in a bowl, mix flour, baking soda, beer, a pinch of salt, and lemon juice.
- Dip the cauliflower florets into the batter.
- Arrange the coated florets on a baking sheet lined with parchment paper.
- Bake in a static oven at 180°C for 10 minutes.
- Meanwhile, prepare the sauce: squeeze the juice of lemons into a small saucepan. Add cornstarch and stir until dissolved.
- Add brown sugar, apple cider vinegar, honey, and a pinch of salt. Bring to a boil, then remove from heat immediately.
- Once the cauliflower is baked, pour the sauce over it or serve on the side.
- Grate fresh lemon zest on top and add salt to taste.
