A quick and easy Roman-style side dish featuring Casalino tomatoes fried in a pan with garlic, chili, basil, and olive oil, until soft and slightly caramelized. Perfect on bruschetta.

- Wash the Casalino tomatoes and cut them in half. Remove only the green stem part.
- Heat a generous amount of olive oil in a pan over medium heat.
- Place the tomato halves in the pan with the cut side facing up.
- Season with salt, then add finely chopped garlic, fresh basil torn by hand, and a chili pepper (optional).
- Cover the pan and cook until the tomatoes soften, about 5-7 minutes.
- Flip the tomatoes carefully and continue cooking, uncovered, on slightly higher heat until the sauce thickens and a crust forms.
- Serve hot, preferably on bruschetta.
