A quick and easy Roman-style side dish featuring Casalino tomatoes fried in a pan with garlic, chili, basil, and olive oil, until soft and slightly caramelized. Perfect on bruschetta.

Method

  1. Wash the Casalino tomatoes and cut them in half. Remove only the green stem part.
  2. Heat a generous amount of olive oil in a pan over medium heat.
  3. Place the tomato halves in the pan with the cut side facing up.
  4. Season with salt, then add finely chopped garlic, fresh basil torn by hand, and a chili pepper (optional).
  5. Cover the pan and cook until the tomatoes soften, about 5-7 minutes.
  6. Flip the tomatoes carefully and continue cooking, uncovered, on slightly higher heat until the sauce thickens and a crust forms.
  7. Serve hot, preferably on bruschetta.
