Method

  1. Clean the pumpkin and remove the skin with a knife.
  2. Cut the pumpkin into slices about 0.5 cm thick.
  3. Arrange the slices on a baking tray, sprinkle with salt to draw out moisture.
  4. Bake at 200°C for about 30 minutes.
  5. Mash the baked pumpkin using a meat tenderizer or potato masher.
  6. Add a fistful of breadcrumbs that have been previously soaked and squeezed out.
  7. Add pine nuts and raisins (optional) for a sweet and sour flavor.
  8. Add breadcrumbs gradually until the mixture is manageable and not too liquid.
  9. Cut some mozzarella or caciocavallo into small pieces and mix in.
  10. Shape the mixture into meatballs.
  11. Prepare a breading station: flour, beaten eggs (or the reserved egg whites), and panko breadcrumbs.
  12. Heat seed oil to frying temperature.
  13. Fry the meatballs until golden and crispy.
  14. Optionally, serve with a pumpkin cream, gorgonzola sauce, and crispy speck.
