Delicious tuna meatballs simmered in a light tomato sauce. A simple and flavorful Italian second course, perfect with pasta or on its own.

Method

  1. Heat olive oil in a saucepan with garlic cloves and a few basil leaves. Add tomato and a pinch of salt. Cook over low heat.
  2. Drain the canned tuna well and flake it with a fork or by hand.
  3. Add the eggs to the tuna and mix well for a couple of minutes.
  4. Gradually add breadcrumbs, mixing with your hands until the dough reaches the right consistency: it should not be too sticky or too crumbly. If too sticky, add more breadcrumbs; if too crumbly, add a little egg or milk.
  5. Shape the mixture into meatballs. Lightly wet your hands if necessary to prevent sticking. Optionally weigh each meatball for uniformity.
  6. (Optional: fry one meatball to test the consistency.)
  7. Place the meatballs into the simmering tomato sauce. Add a few extra basil leaves, torn. Cook gently for about 10 minutes. If the sauce becomes too dry, add a splash of water.
  8. Serve hot.
