Crispy fried bread balls stuffed with creamy mortadella and lemon zest, coated in Parmesan instead of breadcrumbs. A delicious and delicate appetizer from chef Peppe Guida.

Method

  1. If not already prepared, soak stale bread in water (not milk) until soft, then squeeze out excess water.
  2. Blend the diced mortadella in a food processor until smooth.
  3. In a bowl, combine the soaked bread (crumbled), blended mortadella, grated Parmesan, salt, pepper, and grated lemon zest. Mix well.
  4. Add one egg and knead with your hands until the mixture is compact and evenly combined.
  5. Shape the mixture into small balls (the size you prefer).
  6. Coat each ball in grated Parmesan (instead of breadcrumbs) to bread them.
  7. Heat oil for deep frying until hot. Fry the balls for about 20–30 seconds until golden and crispy. Drain on paper towels.
  8. Serve immediately as an appetizer or with a fresh tomato sauce if desired.
