Ingredients
8 items- Stale BreadSoaked in water, not milk
- Mortadella a cubettiBlended into a cream
- Parmigiano ReggianoFor the mixture (quantity to taste)
- SaltTo taste
- Black PepperTo taste
- Lemon ZestGrated zest
- 1 pcsEggTo bind the mixture
- Seed Oil For FryingFor deep frying
Method
- If not already prepared, soak stale bread in water (not milk) until soft, then squeeze out excess water.
- Blend the diced mortadella in a food processor until smooth.
- In a bowl, combine the soaked bread (crumbled), blended mortadella, grated Parmesan, salt, pepper, and grated lemon zest. Mix well.
- Add one egg and knead with your hands until the mixture is compact and evenly combined.
- Shape the mixture into small balls (the size you prefer).
- Coat each ball in grated Parmesan (instead of breadcrumbs) to bread them.
- Heat oil for deep frying until hot. Fry the balls for about 20–30 seconds until golden and crispy. Drain on paper towels.
- Serve immediately as an appetizer or with a fresh tomato sauce if desired.
