Anti-waste bread meatballs. In the kitchen, nothing is thrown away! With stale bread and a few ingredients, you get crispy on the outside, soft on the inside meatballs: simple, cheap, and super tasty.

Method

  1. Soak the stale bread in water until softened, then squeeze it well.
  2. Prepare a mixture with parsley, black olives, desalted capers, garlic, and anchovies in oil, finely chopped.
  3. Combine the mixture with the squeezed bread.
  4. Add a few eggs, a pinch of salt, freshly ground black pepper, and plenty of grated cheese.
  5. Knead everything well until you have a moldable consistency. If too soft, add breadcrumbs.
  6. Shape the mixture into small balls, slightly flattening them.
  7. Fry in a little oil for a few minutes per side until golden brown.
