Ingredients

- 50 gBreadcrumbsSoaked in water and squeezed
- 50 gParmigiano ReggianoGrated
- Fresh BasilChopped, a few leaves
- 1 pcsEggLarge egg
- SaltTo taste
- PepperFreshly ground, to taste
- Olive OilExtra virgin, for sauce
- 1 pcsGarlicClove, crushed
- OnionChopped, a small amount
- Tomato PassataTomato passata (strained tomatoes)
- WaterA splash for the sauce
Method
- Soak the bread in water until soft, then squeeze out the excess liquid.
- In a pan, heat olive oil and add a crushed garlic clove and some chopped onion. Cook until golden.
- Add tomato passata and basil stems. Add a splash of water and let it simmer.
- In a large bowl, combine ground beef, squeezed bread, grated Parmesan, chopped fresh basil, egg, salt, and pepper. Mix well until homogeneous.
- Form meatballs about 40g each (or any size you prefer).
- Place the raw meatballs directly into the simmering tomato sauce.
- Cover the pan partially and cook for 20–25 minutes, until the meatballs are cooked through and the sauce thickens.
- Serve hot with extra grated Parmesan and fresh basil. The sauce can be used later for pasta.
