Polpette di bollito con salsa verde are a Roman tradition: tender meatballs made from boiled beef and hen, flavored with Parmesan and lemon zest, fried until golden, and served with a vibrant green sauce of parsley, capers, and gherkins.

Method

  1. Soak the stale bread in the beef broth until softened.
  2. In a bowl, combine the boiled meat (beef and hen), grated Parmesan cheese, lemon zest, and the soaked bread. Season with salt and mix well.
  3. Shape the mixture into small balls, pressing firmly. Place in the refrigerator to firm up.
  4. For breading, beat the eggs with a pinch of salt. Dip each meatball into the egg, then coat with breadcrumbs, pressing gently.
  5. For the salsa verde, place parsley, celery heart, desalted capers, gherkins, garlic, salt, and a generous amount of extra virgin olive oil in a blender. Process to a coarse paste.
  6. Add the egg yolks and more olive oil if needed, then blend again until emulsified. Set aside in the refrigerator for the flavors to meld.
  7. Heat oil for frying (deep-fryer or pot). Fry the meatballs for about 4 minutes until golden and cooked through.
  8. Drain on paper towels and serve with the salsa verde.
