Tender and flavorful meatballs in a rich sauce made with wine, balsamic vinegar, garlic, rosemary, and a touch of rice flour for thickness. Perfect for both kids and adults.

Method
- In a bowl, combine ground chicken and veal with pepper, egg, breadcrumbs, and grated lemon zest. Mix until well combined.
- With wet hands, shape the mixture into meatballs the size of a large olive.
- Heat abundant olive oil in a pan over high heat. Fry the meatballs until golden brown on all sides, then remove them from the pan.
- Finely chop a clove of garlic and add it to the pan with rosemary. Sauté briefly.
- Deglaze with red wine and balsamic vinegar, and let the alcohol evaporate.
- Add a splash of water and let the sauce simmer. Remove the rosemary sprigs.
- In a small bowl, mix rice flour with a little water to make a slurry. Add to the pan and stir until the sauce thickens.
- Return the meatballs to the pan, coat them with the sauce, and serve.
