Method
- Prepare the tomato sauce: heat extra virgin olive oil in a large pot. Add finely chopped celery, carrot, onion, and basil. Sauté for a few minutes.
- Add the peeled tomatoes, crushing them by hand directly into the pot. Season with salt and pepper. Cook over medium heat for about 10 minutes.
- Meanwhile, in a large bowl, combine ground beef, egg, grated Parmesan, grated pecorino, breadcrumbs, salt, and pepper. Mix well until evenly combined.
- Shape the mixture into medium-sized meatballs.
- Lightly coat each meatball with flour.
- Once the tomato sauce has cooked for 10 minutes, gently place the meatballs into the sauce.
- Simmer the meatballs in the sauce for 20-30 minutes, or up to 40 minutes, until they are firm and cooked through.
- Serve the meatballs with extra sauce and a sprinkle of grated Parmesan.
