Traditional Italian meatballs made with a blend of veal, pork, and beef, mixed with potato and stale bread, then simmered in a simple tomato sauce with basil.

- Combine 500g each of veal, pork, and beef in a large bowl.
- Soak slices of stale bread in water until softened.
- Boil one potato until tender.
- Grate one clove of garlic.
- Add the soaked bread, boiled potato, egg, grated garlic, a pinch of salt, and pecorino cheese to the meat. Mix thoroughly.
- In a large pot, place carrot chunks, a piece of celery, a halved garlic clove, and a piece of onion.
- Add tomato passata or crushed tomatoes and a generous amount of basil. Let the sauce simmer.
- While the sauce cooks, shape the meat mixture into meatballs. Do not coat them in flour.
- Gently place the meatballs into the simmering sauce.
- Cook until the meatballs are cooked through and the sauce has thickened. Serve with crusty bread.
