Meatballs in Tomato Sauce

Traditional Italian meatballs made with a blend of veal, pork, and beef, mixed with potato and stale bread, then simmered in a simple tomato sauce with basil.

Method

  1. Combine 500g each of veal, pork, and beef in a large bowl.
  2. Soak slices of stale bread in water until softened.
  3. Boil one potato until tender.
  4. Grate one clove of garlic.
  5. Add the soaked bread, boiled potato, egg, grated garlic, a pinch of salt, and pecorino cheese to the meat. Mix thoroughly.
  6. In a large pot, place carrot chunks, a piece of celery, a halved garlic clove, and a piece of onion.
  7. Add tomato passata or crushed tomatoes and a generous amount of basil. Let the sauce simmer.
  8. While the sauce cooks, shape the meat mixture into meatballs. Do not coat them in flour.
  9. Gently place the meatballs into the simmering sauce.
  10. Cook until the meatballs are cooked through and the sauce has thickened. Serve with crusty bread.
