Nashville-Style Fried Chicken

Crispy fried chicken with a sweet and spicy glaze, Nashville-style. Steamed first for tenderness, then double-fried and brushed with a buttery hot chili glaze. Served traditionally with white bread and pickles.
Ingredients
12 items- Chicken ThighsPreferably chicken thighs
- SaltUsed for seasoning chicken, in flour, and in glaze (½ tsp for glaze)
- Flour
- Black PepperUsed in flour and in glaze (1 tsp for glaze)
- Egg
- Milk
- Salsa piccanteYour favourite hot sauce
- ButterFor the glaze
- Paprika
- Chili PowderCayenne or chili powder
- Garlic Powder
- Zucchero di Canna ChiaroLight brown sugar; dark brown works too
Method
- Steam the chicken thighs for 15 minutes, then let them cool completely. For best results, refrigerate overnight to dry the surface.
- Season the chicken pieces with salt on both sides.
- Mix the flour with a pinch of salt and some black pepper.
- In a bowl, whisk together eggs, milk, and hot sauce to make the egg wash.
- Dredge each chicken piece first in the seasoned flour, then in the egg wash, then back in the flour, coating thoroughly.
- Heat oil to a high temperature and fry the chicken for 10 minutes. Remove and let rest for a few minutes.
- Increase the oil temperature and fry again for 2-3 minutes until deep golden and crispy.
- For the glaze, melt butter and stir in paprika, chili powder, garlic powder, light brown sugar, half a teaspoon of salt, and one teaspoon of black pepper. Mix well.
- Brush the hot fried chicken generously with the butter glaze on all sides.
- Serve immediately with white bread and pickles (traditionally as a sandwich or on the side).
