Crispy and flavorful Japanese fried chicken, marinated with soy sauce, sake, ginger, and garlic, coated in potato starch and fried to golden perfection. Served with a wedge of lime.

Ingredients
12 items- Pollo (coscia o petto)
- 1 pcsEgg
- Zenzero (grattugiato)
- Aglio (grattugiato)
- Soy Sauce
- Sakè
- Sesame Oil
- Sugara pinch
- Saltto taste
- Pepperto taste
- Potato Starch
- Lime (per servire)alternatively sudachi or yuzu
Method
- Cut chicken thigh (or breast) into pieces roughly 3–4 cm in size.
- In a bowl, combine the chicken with one whole egg, grated ginger, grated garlic, soy sauce, sake, sesame oil, a pinch of sugar, salt, and pepper. Mix well to marinate.
- Optional: let the chicken marinate for 2–3 hours for deeper flavor.
- Just before frying, add potato starch to the marinade and mix thoroughly; the marinade becomes the batter.
- Heat frying oil to about 170°C (175°F) – do not exceed 180°C.
- Carefully drop the chicken pieces into the oil, keeping distance between them so they don't stick together.
- Fry for at least 5 minutes until golden brown and crispy.
- Drain the fried chicken on paper towels.
- Serve with a wedge of lime (or sudachi/yuzu) on the side.
